I´m phd. student in food sciences at the Instituto Politécnico Nacional. I am currently studying macrostructural and microstructural changes in biological tissues, for which I have carried out different techniques in CLSM, SEM and has begun with the development of AFM techniques to evaluate the nanomechanics changes. I graduated from the National School of Biological Sciences of the IPN as a biochemical engineer.My thesis topic was the evaluation of agro-industrial residues from the extraction of castor oil, which were studied by SEM. Finally, I completed a master's degree in food sciences. Where I worked with the microencapsulation of orange essential oil, the morphologies of these microcapsules were studied by SEM.
